Scientific theories are notoriously defeasible. Sometimes whole theories will be discarded and replaced. Usually, however, there is a significant retention of information from older theories, and it is parts of given theories - terms, concepts, models, parts of models, posits, and hypotheses - that are cancelled and replaced.
